Fish Chowder
We were given some cod that was caught by a friend of a friend in Alaska (I think!), and we were hard pressed for a recipe to use it up. We found one for a fish chowder that was very simple, and pretty flavorful. I modified it quite a bit, so here are my notes.
1 cup carrots, sliced
1 Medium Leek, White and green parts in 1/2" pieces
2 Yukon Gold Potatoes, diced
1 cup Celery, chopped
3 tbs butter
2 tbs Flour
1 cup whole milk
1/2 cup white wine
1-1/2 pounds skinless cod, cut in 3/4" pieces
3 tbs Fresh Dill, chopped
Salt
Freshly Ground Pepper
Melt butter over medium heat and add carrots, leeks, potatoes, and celery. Saute for about 8 minutes, or until carrots become slightly tender. Add flour, stir for about a minute. Add milk and wine, bring to gentle boil. Reduce heat to simmer, and add fish, salt, pepper, and dill. Cook until fish is just cooked through.
We made a simple biscuit dough, put the chowder in a glass baking dish, topped with the biscuits. We brushed the biscuits with butter and baked at 450 until golden brown.
