Fatted Calf



I've recently discovered a charcuterie called Fatted Calf, based out of Oakland. They sell their goods at the Berkeley Farmers market, and they produce a variety of traditional meat products, and have a number of experimental concoctions.

We're fans of the Fegatelli and their Finocchiona Salami. We've also tried their Sweet Italian sausages and weren't wowed, but the quality was definitely very high. We look forward to trying more of their creations especially trying a number of their duck-based meats.

On that note, I was very excited to get their newsletter today announcing their new product: Bacon! Here's their blurb:

When is the last time you were a participant in a Bacon Experiment? That's what we thought. Don't worry, it's painless (to say the least), and hey, you get to eat bacon. We know you've been wondering what Taylor and Toponia were scheming about and dreaming about on their little sojourn south of the border, and never fear, try as they might, they were never able to completely free their minds of The Pig. And, so the bacon experiment was born, and this Saturday will be your first chance to Be Experimented On. When queried, Taylor said this was a pretty much a straight-up bacon preparation, all mapley and a little peppery, and smoked, natch.
"Pretty effin' good" were his (almost) exact words. So, belly up, purchase your precious package of pig, and let the experimentin' begin. see you at the Market!
