Fried Chicken Sandwiches



Tonight we threw together a simple meal with stuff we had in the fridge.

We took a few chicken breasts, pounded them flat. Dredge the breasts and tenders in flour. The dredged them in egg, and then crusted them with a combination of panko, pepper, salt, and red pepper flakes.

We heated some canola oil in a pan, and fired the breasts about 3 or 4 minutes per side, until they were brown and the juices ran clear.

Patted them with paper towels to remove the excess oil, and served them with mustard and mayo on Milton's Bakery buns.

Jenny pulled together a Welsh Rarebit, under the advice of her father. He said we might try getting Olivia to eat broccoli by calling them "trees" and offering her some sauce in which to dip them. I liked the Rarebit, but Jenny felt it was too bitter - she felt the substitution of Sierra Celebration Ale instead of the prescribed Porter was the culprit.


The meal wasn't of the type we've made in the past for NYE, but was ultimately comforting and satisfying.
