Plum Chutney




6 - lb Plums; pitted/quartered
2 - lb Apple, granny smith
2 - Onion, large; chopped
6 - Garlic clove; minced
4 c Brown sugar
4 c Vinegar
2 tb Salt
2 tb Ginger, ground
1 tb Fresh Ginger, minced
1 tb Cloves, ground
1 ts Red pepper

Remove pits and cut plums into quarters. Cut apples into 1/8's. Combine all ingredients in a large pot; bring to a boil. Cook, uncovered, over medium heat 2 hours or until thickened, stirring occasionally.

Process as you would any jelly using sterilized jars, caps, and boil for 10 minutes.

Serve with chicken or pork, or use as sandwich condiment.
