Tomatoes, Tomatoes, Tomatoes
One of my favorite times of year is June, July and August when the fantastic Heirloom tomatoes come in season. For the last week we have been eating wonderful tomato salads with basil from our garden, buffalo mozarella, fresh cracked pepper and a little extra virgin olive oil. So tasty.
The tomatoes at this point in the season (forget about super market tomatoes -- they'll always be flavorless and have the texture of styrofoam) are sweet, juicy, and have a firm skins, with a soft and tender inside. The seeds are large and the juices in the tomato cavity are jelly like. With a fork and steak knife, you can slice a wedge of tomato, spear a bit of buffalo mozzarella, drag the bite through the olive oil and pepper and put directly in your mouth. The flavor is like the summer captured on your plate. The experience of this fresh salad, in my opinion, could only be rivaled by the experience of eating a sea-fresh oyster, with all the flavor of the cool, clean salt water and the sweet, sweet oyster.
