Boschetto di Tartufo Bianchetto



This cheese, from Tuscany, is absolutely amazing. It has the texture and form of a dry mozzarella, but the the flavor is nowhere near. Made form sheep and cows milk, this cheese is combined with savings of White Truffle and the cheese itself becomes totally perfumed. throughout. You place a small amount o fthis cheese on your tongue, and your mouth, nose, everything fills with truffle.


I suspect it would be wonderful grated over scrambled eggs -- the texture seems like it would also be perfect for a grilled cheese (especially if made in a panini press with other wild mushrooms).

Yum.


It's on the expensive end -- $30/pound, but totally worth it. Highly recommended.
