Simple Cucumber Salad



This recipe was modified from one found in one of our monthly magazines. I increased the amount for fresh dill, and added sweet onions. This is even better the next day.

We served it alongside bratwurst and potato salad.

1 English Cucumber, thinly sliced
1 Sweet Onion (Vadalia or similar)

Dressing:

1/4 cup White Vinegar
3 TBS Sugar
1/3 Cup Fresh Dill, finely chopped

Place cucumbers in bowl, layer with coarse salt. Let stand for 15 minutes. Drain and dry cucumbers. Mix vinegar and sugar, mix until dissolved. In a large bowl add onions, cucumbers and dill. Add dressing, mix well. Cover and refrigerate for 1-2 hours. Add salt and pepper to taste.
