Shrimp, Mango and Red Pepper Kabobs



Another tasty, simple dish I threw together for Setve and Millicents's going away party.

50 - Prawns, peeled and de-veined
3 - Large Red Bell Peppers, cut into 1" pieces
3 - Firm, Ripe Mangoes, cubed into 3/4" pieces
3 TBS Crushing Nora Pepper*
4 TBS Olive Oil
3 Minced Garlic Cloves
2 TBS Minced Fresh Ginger
15 - Skewers

Soak Skweres in warm water for 30 minutes. Prepare charcoal grill, until coals are medium hot.

Blend all ingredients in bowl. Let marinate for 3 hours. Alternate Red Bell Pepper, Shrimp and Mango on skewers.

Grill Skewers until vegitables slightly blackened. Move skewers away form direct heat and cook until shrimp are cooked through.

*This chilli is mild. It is soaked and used to flavour rice dishes and stews. Available in specialty shops as crushed/powder form. Essential in romesco sauce.
