Grilled Chicken Sandwich with Bacon, Apple and Arugula
We've been making this sandwich lately. It's very tasty.
2 Half skinless boneless chicken breasts
1 Avocado
4 crispy bacon strips (we've been using bacon from fatted calf)
1 hand full of arugula
1 tart, green apple peeled and sliced to 1/4" thick
Sweet/Hot Mustard (we use Menodcino)
Bakery Fresh Buns
Pound breasts until uniform thickness - use flat end of meat tenderizer, or place breast halves between wax paper and use a heavy skillet. Grill or bake the breasts - we use the Grill on the Wolf range, basting breast with Olive oil and grilling until done (juices run clear).
While breasts are grilling, slice or mash avocado and cover one end of bun. Coat top half of bun with mustard, layer on arugula, apples and bacon. Place breast between two halves.
Yummy.
