Potato Pancakes



We made potato pancakes, unadorned, a few nights ago to go with the Sauerbraten.

Here's our approach.

We peeled two pounds or so of russets, placing them in ice water after peeling. Then I shredded the potatoes - I used the food processor. I'm sure there is some reason to use a hand grater, but we were short on time, and I wasn't interested in grating the skin off my fingers.

I then took the shredded potatoes and squeezed them by hand through a strainer, catching the extruded liquid in a bowl. Once I finished this process - it took about 15 minutes - i carefully separated the liquid that had been squeezed out. The potato starch will line the bottom of the bowl.

Blend one beaten egg with the starch and fold into the shredded potatoes. Hand form into think pancakes.

Fry the pancakes in very hot oil, over medium-high heat, until brown. Flip over, repeat.

Light, crispy, not-too-greasy pancakes.
