Din Din
Another fabulous few dinners were made in my kitchen. We had a few good ones lately.
A few nights ago we had pork chops that were brined in salt water, cummin and cayenne pepper. We cooked them over coals and served them with yucca, black beans and jack cheese stuffed jalapeno peppers. We finished the evening with vanilla ice cream with cinnamon-coffee chocolate sauce.
Then last night we made a bacon-spinach salad that turned out better than expected - we blended the spinach with arugula for a peppery addition, topped the greens, eggs, mushrooms and onions with a chipotle cheddar dressing that was spicy and tasty.
Yummy.
Food is good food.
